  • 12 sheets Lasagna noodles
  • 1.5 cups Ricotta cheese
  • 1.5 cups Mozzarella cheese, shredded
  • 0.5 cups Parmesan cheese, grated
  • 1 medium Zucchini, finely diced
  • 1 medium Carrot, grated
  • 1.5 cups Baby spinach, chopped
  • 2 cloves Garlic, minced
  • 1 large Egg
  • 2 cups Marinara sauce
  • 1 tablespoon Olive oil
  • 1 teaspoon Dried Italian seasoning
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Preheat oven to 375°F (190°C) and grease a 9x13-inch baking dish with non-stick spray or olive oil.

Step 2

Bring a large pot of salted water to boil and cook the lasagna noodles according to package instructions until al dente. Drain and lay the noodles flat on a clean surface to cool.

Step 3

Heat olive oil in a large skillet over medium heat. Add garlic and sauté until fragrant, about 1 minute. Add the zucchini, carrot, and spinach, and cook until softened, about 5 minutes. Remove from heat and let cool slightly.

In a large mixing bowl, combine ricotta cheese, 1 cup of mozzarella, Parmesan cheese, cooked vegetables, egg, Italian seasoning, salt, and black pepper. Mix well until fully incorporated.
