Ingredients

  • 2 large Carrots
  • 2 stalks Celery
  • 1 large Onion
  • 1.5 cups Breadcrumbs
  • 0.5 cups All-purpose flour
  • 0.5 cups Vegetable oil or schmaltz
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 1 teaspoon Paprika
  • 0.5 teaspoons Garlic powder
  • 2 tablespoons Water or vegetable broth

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

Peel and roughly chop the carrots, celery, and onion into smaller pieces for easy processing.

Step 3

In a food processor, pulse the carrots, celery, and onion together until finely minced, but not pureed.

Step 4

Transfer the minced vegetables into a mixing bowl and add the breadcrumbs, flour, vegetable oil or schmaltz, salt, black pepper, paprika, garlic powder, and water or vegetable broth.

Step 5

Using clean hands or a spatula, mix the ingredients until they form a cohesive dough-like mixture. Adjust with a small amount of water or breadcrumbs if the mixture is too wet or dry.

Step 6

Divide the mixture into two even portions and shape each into a log approximately 8-10 inches long. Place the logs onto the prepared baking sheet.

Step 7

Bake the kishke logs in the preheated oven for 45-50 minutes, or until golden brown and firm to the touch.

Step 8

Remove the logs from the oven and allow them to cool for a few minutes before slicing into rounds.

Step 9

Serve warm as a side dish, or enjoy with your favorite gravy or sauce.
