Ingredients

  • 2 pieces Hoagie rolls
  • 1 cup Lettuce (shredded)
  • 1 large Tomato (sliced)
  • 0.5 large Cucumber (sliced)
  • 0.25 cup Red onion (thinly sliced)
  • 0.5 cup Roasted red peppers (sliced)
  • 4 slices Provolone cheese
  • 0.25 cup Mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Red wine vinegar
  • 2 tablespoons Olive oil
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Slice the hoagie rolls in half lengthwise without cutting all the way through, creating a pocket for the filling.

In a small bowl, mix the mayonnaise, Dijon mustard, red wine vinegar, olive oil, dried oregano, salt, and black pepper to make the dressing. Set aside.
