  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup Vegetable oil (for frying)
  • 1 cup Corn kernels (fresh, canned, or frozen)
  • 1 small Red bell pepper, finely diced
  • 0.25 cup Red onion, finely diced
  • 2 tablespoons Fresh cilantro, chopped
  • 2 tablespoons Lime juice
  • 1 tablespoon Olive oil
  • 0.25 teaspoon Salt (for salsa)
  • 0.25 teaspoon Black pepper (for salsa)

Directions

Step 1

1. Grate the zucchini and carrot, then place them in a clean kitchen towel or cheesecloth. Squeeze tightly to remove as much moisture as possible.
