Ingredients

  • 2 medium Zucchini
  • 2 medium Carrot
  • 1 large Red onion
  • 120 grams All-purpose flour
  • 2 large Egg
  • 1.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 0.5 teaspoons Ground paprika
  • 0.5 teaspoons Garlic powder
  • 2 tablespoons Fresh parsley
  • 3 tablespoons Vegetable oil (for frying)
  • 1 tablespoon Butter
  • 1 teaspoon Sugar

Directions

Step 1

Grate the zucchini and carrot using a box grater. Place the grated vegetables into a clean kitchen towel and squeeze out as much excess moisture as possible. Set aside.

Step 2

Finely chop the fresh parsley and add it to the grated vegetables in a large mixing bowl.

Step 3

Add the flour, eggs, 1 teaspoon of salt, black pepper, ground paprika, and garlic powder to the bowl. Mix until just combined to form a batter-like consistency.

Slice the red onion thinly. Heat the butter in a skillet over medium heat. Add the onion slices and cook for 5 minutes, stirring occasionally.
