  • 4 cups cooked white rice
  • 2 tablespoons vegetable oil
  • 2 pieces large eggs
  • 1 medium, diced carrot
  • 0.5 cup frozen peas
  • 1 medium, diced red bell pepper
  • 3 stalks, sliced green onions
  • 2 cloves, minced garlic
  • 3 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Prepare all ingredients before starting: dice the carrot and red bell pepper, slice the green onions, and mince the garlic.

Step 2

Heat 1 tablespoon of vegetable oil in a large non-stick skillet or wok over medium-high heat.

Add the diced carrot and cook for 2-3 minutes until slightly softened.

Add the frozen peas and diced red bell pepper to the skillet, cooking for another 3-4 minutes until all vegetables are tender.
