Ingredients

  • 12 ounces Fettuccine pasta
  • 3 tablespoons Olive oil
  • 3 whole Garlic cloves
  • 1 medium Zucchini
  • 1 medium Carrot
  • 1 medium Red bell pepper
  • 1 cup Cherry tomatoes
  • 2 cups Baby spinach
  • 1 cup Parmesan cheese (optional)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Red pepper flakes (optional)
  • 2 tablespoons Fresh parsley (for garnish)
  • 1 tablespoon Lemon juice

Directions

Step 1

Bring a large pot of salted water to a boil. Add the fettuccine and cook according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

Step 2

While the pasta cooks, prepare the vegetables. Thinly slice the zucchini, carrot, and red bell pepper into strips. Halve the cherry tomatoes and mince the garlic.

Step 3

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the garlic and sauté for 1-2 minutes until fragrant.
