Ingredients

  • 2 large Potatoes
  • 1 medium Carrot
  • 0.5 cup Green peas
  • 0.25 cup Green beans
  • 1 small Green chili
  • 1 teaspoon Ginger
  • 2 tablespoons Coriander leaves
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 0.5 teaspoon Garam masala
  • 0.5 teaspoon Salt
  • 1 cup Breadcrumbs
  • 0.5 cup All-purpose flour
  • 0.5 cup Water
  • 0 for frying Oil

Directions

Step 1

Peel and boil the potatoes until soft. Mash them in a large bowl and set aside.

Step 2

Grate the carrot and finely chop the green beans, green chili, and coriander leaves.

Step 3

In a pan, add 1 tablespoon of oil and sauté the grated ginger, chopped green chili, and grated carrot until soft.

Step 4

Add the green peas and green beans to the pan, and cook for another 2-3 minutes until tender. Turn off the heat.

Step 5

Add the sautéed vegetables to the mashed potatoes.

Step 6

Sprinkle in the turmeric powder, red chili powder, garam masala, and salt. Mix everything thoroughly to form a uniform mixture.

Step 7

Shape the mixture into small round patties of desired size and set aside.

In a separate bowl, mix the all-purpose flour with water to make a smooth batter with no lumps.

Dip each patty into the flour batter, ensuring it's coated evenly.

Roll the batter-coated patty in the breadcrumbs to coat it completely and give it a crispy texture.

In a frying pan, heat oil over medium heat. Once the oil is hot, carefully slide in the patties.

Fry the patties until both sides are golden brown and crisp, approximately 3-4 minutes per side.

Step 13

Remove the cutlets from the oil and drain on paper towels to remove excess oil.

Step 14

Serve hot with ketchup or chutney as desired.
