Ingredients

  • 4 large pieces flour tortillas
  • 2 tablespoons olive oil
  • 1 small, diced onion
  • 2 medium, diced bell peppers (red, yellow, or green)
  • 1 small, diced zucchini
  • 2 minced garlic cloves
  • 1 cup, cooked (or one 15-ounce can, drained and rinsed) black beans
  • 1 cup cooked rice
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 0.5 teaspoon paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 0.5 cup salsa
  • 0.25 cup sour cream (optional)
  • 2 tablespoons, chopped fresh cilantro (optional)

Directions

Step 1

Heat the olive oil in a large skillet over medium heat.

Step 2

Add the diced onion and sauté for 2-3 minutes until translucent.

Stir in the bell peppers, zucchini, and minced garlic, and sauté for an additional 5-7 minutes until the vegetables are tender.
