  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Olive oil
  • 1 large Yellow onion, diced
  • 3 medium Carrots, chopped
  • 2 medium Celery stalks, chopped
  • 1 large Russet potato, peeled and cubed
  • 3 cloves Cloves of garlic, minced
  • 6 cups Low-sodium beef broth
  • 1 15-ounce can Canned diced tomatoes
  • 0.75 cup Pearl barley, rinsed
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried parsley
  • 1 Bay leaf
  • 1 cup Frozen green beans
  • 0.5 cup Frozen peas

Directions

Step 1

Sprinkle the beef stew meat with salt and black pepper.

Step 2

In a large skillet over medium-high heat, heat the olive oil. Add the beef and sear until browned on all sides, about 4-5 minutes. Transfer the beef to the Crock Pot.

Step 3

In the same skillet, sauté the onion, carrots, and celery for 2-3 minutes until slightly softened. Add the minced garlic and cook for an additional minute. Transfer the vegetable mixture to the Crock Pot.
