  • 2 cups broccoli florets
  • 1 15-ounce can canned diced tomatoes (with juices)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup shredded cheese (optional, for topping)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Rinse the pearl barley under cold water using a fine mesh strainer, and set aside.

In a large ovenproof skillet or pot, heat the olive oil over medium heat.

Add the diced onion and sauté for 3-4 minutes until softened. Stir in the minced garlic, cooking for another minute until fragrant.

Add the sliced carrots, zucchini, red bell pepper, and broccoli florets to the skillet. Cook for 5-7 minutes, stirring occasionally, until the vegetables begin to soften.
