Ingredients

  • 3 cups All-purpose flour
  • 2.25 teaspoons Instant yeast
  • 2 teaspoons Sugar
  • 1.5 teaspoons Salt
  • 1.25 cups Warm water (not hot)
  • 2 tablespoons Olive oil
  • 3 tablespoons Za'atar spice blend
  • 2 tablespoons Extra olive oil (for brushing)

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour, instant yeast, sugar, and salt. Stir the dry ingredients together to distribute evenly.

Step 2

Slowly add the warm water (ensure it’s not too hot, around 100–110°F is ideal) and olive oil to the dry mixture. Stir together until it starts forming a shaggy dough.

Step 3

Transfer the dough to a lightly floured surface and knead for 8–10 minutes until smooth and elastic. If the dough feels sticky, sprinkle a tiny bit of flour as needed, but avoid over-flouring.

Step 4

Lightly grease a clean bowl with olive oil, place the dough inside, and cover it with a damp towel or plastic wrap. Let it rise in a warm spot for 1 hour, or until it doubles in size.

Step 5

Once the dough has risen, punch it down gently to release excess air. Divide the dough into 6 equal portions and shape each portion into a ball.

Step 6

Using a rolling pin, roll each dough ball into a thin oval or circle, about 8–10 inches in diameter.

Step 7

Heat a cast-iron skillet or non-stick pan over medium-high heat. Brush one side of the rolled dough lightly with olive oil and place it oil-side down onto the hot skillet. Cook for about 1–2 minutes, or until bubbles form and the bottom has golden spots.

Step 8

Flip the laffa and immediately sprinkle 1/2 tablespoon of za'atar spice onto the cooked side. Press gently with a spatula to help it adhere. Cook the second side for another 1–2 minutes until golden spots appear.

Step 9

Remove the laffa from the skillet and brush the top with a bit more olive oil if desired. Repeat the process for the remaining dough portions.

Step 10

Serve the laffa warm, either as-is or filled with your favorite vegan ingredients like roasted vegetables, hummus, or falafel.
