Ingredients

  • 250 grams All-purpose flour
  • 1.5 teaspoons Baking powder
  • 0.5 teaspoons Baking soda
  • 0.5 teaspoons Salt
  • 1 teaspoons Sugar
  • 150 milliliters Warm water
  • 1 tablespoons Neutral oil (e.g., sunflower or vegetable oil)
  • 500 milliliters Neutral oil for frying

Directions

Step 1

In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and sugar.

Step 2

Gradually pour in the warm water while stirring the mixture with a spoon or chopsticks. Once the dough begins to come together, add 1 tablespoon of neutral oil.

Step 3

Knead the dough in the bowl for 5–8 minutes until it becomes smooth and elastic. If the dough feels too sticky, lightly dust your hands with flour as needed.

Step 4

Cover the dough with a damp kitchen towel or plastic wrap and let it rest for 1 hour at room temperature.

Step 5

After the dough has rested, transfer it to a lightly floured surface and roll it out into a rectangle, approximately 10 inches (25 cm) long and 4 inches (10 cm) wide.

Step 6

Using a sharp knife or dough cutter, cut the rectangle into 6–8 strips, each about 1 inch (2.5 cm) wide. Take two strips and stack them on top of each other. Use a chopstick to press firmly down the middle of the strips, creating an indentation to help them stick together.

Step 7

Heat 500 milliliters of neutral oil in a deep pan or wok to 375°F (190°C). The oil should be deep enough for the dough sticks to float while frying.

Step 8

Carefully stretch a prepared dough strip to about twice its length and lower it into the hot oil. Fry 1–2 dough sticks at a time to avoid overcrowding the pan.

Step 9

Fry each dough stick for about 2–3 minutes, flipping frequently with tongs or chopsticks until they puff up and turn golden brown on all sides.

Step 10

Remove the You Tiao from the oil and drain on a plate lined with paper towels. Repeat with the remaining dough strips.

Step 11

Serve warm and enjoy with soy milk, congee, or your favorite dipping sauce.
