  • 2 stalks green onions (white and green parts separated, chopped)
  • 6 cups vegetable broth
  • 1 teaspoon salt
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 1 teaspoon toasted sesame oil
  • 0.25 teaspoon white pepper
  • 2 tablespoons cilantro leaves (optional, for garnish)

Directions

Step 1

Prepare the winter melon by peeling the thick green skin, removing the seeds, and cutting it into 2 cm cubes. Set aside.
