Ingredients

  • 300 g Seitan
  • 500 ml Vegetable stock
  • 3 tbsp White wine vinegar
  • 2 tbsp Olive oil
  • 2 tbsp Capers (for garnish)
  • 2 tbsp Parsley (for garnish)
  • 100 g Sunflower seeds
  • 150 g Silken tofu
  • 3 tbsp Lemon juice
  • 1 sheet Nori sheet
  • 2 tbsp Capers (for sauce)
  • 1 tsp Dijon mustard
  • 100 ml Water
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Directions

Step 1

Preheat a medium skillet over low heat and warm the vegetable stock.

Step 2

Add the seitan slices to the skillet along with 2 tablespoons of white wine vinegar. Simmer for 10–15 minutes until the flavors are infused, then remove from heat and let cool slightly.

Step 3

To make the 'tuna' sauce, soak the sunflower seeds in warm water for 15 minutes. Drain and rinse.

Step 4

Blend the sunflower seeds, silken tofu, remaining 1 tablespoon of white wine vinegar, lemon juice, crumbled nori sheet, 2 tablespoons of capers, Dijon mustard, water, olive oil, salt, and black pepper in a blender or food processor until smooth and creamy. Add extra water, if needed, to reach your desired consistency.

Step 5

Arrange the cooled seitan slices on a serving platter. Spoon the 'tuna' sauce generously over the slices, covering them completely.

Step 6

Garnish with capers and chopped parsley. Serve chilled or at room temperature.
