Preheat a medium skillet over low heat and warm the vegetable stock.
Add the seitan slices to the skillet along with 2 tablespoons of white wine vinegar. Simmer for 10–15 minutes until the flavors are infused, then remove from heat and let cool slightly.
To make the 'tuna' sauce, soak the sunflower seeds in warm water for 15 minutes. Drain and rinse.
Blend the sunflower seeds, silken tofu, remaining 1 tablespoon of white wine vinegar, lemon juice, crumbled nori sheet, 2 tablespoons of capers, Dijon mustard, water, olive oil, salt, and black pepper in a blender or food processor until smooth and creamy.
