Ingredients

  • 3 cups cooked jasmine or basmati rice (preferably day-old)
  • 2 links vegan sausage, chopped into bite-sized pieces
  • 1 medium carrot, diced
  • 1 cup green beans, trimmed and chopped
  • 0.5 cup frozen peas
  • 1 medium red bell pepper, diced
  • 3 stalks green onion, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced or grated
  • 3 tablespoons soy sauce or tamari (for gluten-free)
  • 1 tablespoon toasted sesame oil
  • 2 tablespoons neutral oil (such as avocado or vegetable oil)
  • 0.5 teaspoon ground turmeric
  • 0.25 teaspoon black pepper
  • 0 N/A salt (optional, to taste)

Directions

Step 1

Prepare all ingredients: dice the vegetables, slice the green onions, mince the garlic and ginger, and crumble or chop the vegan sausage into bite-sized pieces.

Step 2

Heat 1 tablespoon of neutral oil in a large skillet or wok over medium heat. Add the vegan sausage and cook for 4-5 minutes, stirring occasionally, until browned and crispy. Remove the sausage from the skillet and set aside.

Step 3

In the same skillet, heat the remaining tablespoon of neutral oil. Add the minced garlic and ginger, and sauté for about 30 seconds until fragrant.

Step 4

Add the diced carrot, green beans, and red bell pepper to the skillet. Cook for 4-5 minutes, stirring frequently, until the vegetables are tender but still crisp.

Step 5

Stir in the frozen peas, ground turmeric, and black pepper. Cook for another 1-2 minutes.

Step 6

Push the vegetables to one side of the skillet and add the cooked rice to the other side. Drizzle the soy sauce (or tamari) and toasted sesame oil over the rice. Stir well to evenly coat the rice with the seasonings.

Step 7

Mix the rice and vegetables together in the skillet, ensuring everything is well-combined and heated through. Taste and add salt if needed.

Step 8

Add the cooked vegan sausage back into the skillet and toss gently to incorporate.

Step 9

Garnish with sliced green onions and serve hot. Enjoy your vegan vegetable and sausage fried rice!
