Ingredients

  • 4 slices Vegan turkey slices
  • 0.5 whole Ripe avocado
  • 2 slices Sourdough bread (vegan)
  • 0.5 cup Spinach leaves
  • 2 slices Tomato
  • 1 tablespoon Vegan mayonnaise
  • 1 teaspoon Dijon mustard
  • 0.125 teaspoon Salt
  • 0.125 teaspoon Black pepper

Directions

Step 1

Toast the sourdough bread slices in a toaster or on a pan until lightly golden and crisp.

Step 2

Slice the avocado in half, remove the pit, and scoop out one-half of the avocado into a small bowl. Mash it with a fork until smooth. Add a pinch of salt and black pepper, and mix to incorporate.

Step 3

Lay one slice of toasted bread on a clean surface. Spread vegan mayonnaise evenly across one side. Spread the mashed avocado across the other slice of bread.

Step 4

Layer the spinach leaves evenly on top of the vegan mayonnaise.

Step 5

Add two slices of tomato on top of the spinach leaves.

Place the vegan turkey slices over the tomato slices.

Step 7

Spread a thin layer of Dijon mustard on the mashed avocado slice of bread.
