Ingredients

  • 400 grams Korean rice cakes (tteok)
  • 3 cups Water or vegetable broth
  • 3 tablespoons Gochujang (Korean chili paste, vegan-friendly)
  • 1 tablespoon Gochugaru (Korean chili flakes)
  • 2 tablespoons Soy sauce (gluten-free if needed)
  • 2 teaspoons Sugar
  • 3 cloves Garlic, minced
  • 3 stalks Green onions, sliced
  • 200 grams Firm tofu, cubed (optional for added protein)
  • 1 teaspoon Sesame seeds
  • 1 teaspoon Sesame oil (optional, for garnish)

Directions

Step 1

If your rice cakes (tteok) are frozen or firm, soak them in warm water for 10-15 minutes to soften.

Step 2

In a large skillet or shallow pot, heat the water or vegetable broth over medium heat.

Step 3

Add the gochujang, gochugaru, soy sauce, sugar, and minced garlic to the broth. Stir until the gochujang is dissolved and the mixture is smooth.

Step 4

Drain the rice cakes and add them to the pot. Let them simmer in the sauce for 8-10 minutes, stirring occasionally to prevent sticking.

Step 5

If using, add cubed tofu halfway through cooking to warm it through and allow it to absorb the flavors.

Step 6

Once the rice cakes are tender and the sauce has thickened, add the sliced green onions and stir. Cook for another 1-2 minutes.

Step 7

Remove from heat and garnish with sesame seeds and a drizzle of sesame oil, if using.

Step 8

Serve hot and enjoy your flavorful Vegan Tteok-bokki!
