Ingredients

  • 250 grams All-purpose flour
  • 125 grams Vegan butter
  • 3 tablespoons Cold water
  • 250 grams Dried mixed fruit (e.g., raisins, currants, sultanas)
  • 1 medium Apple, peeled and grated
  • 50 grams Brown sugar
  • 1 orange Orange zest
  • 4 tablespoons Orange juice
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 0.25 teaspoon Ground cloves
  • 2 tablespoons Brandy or apple juice (optional)
  • 2 tablespoons Powdered sugar (for dusting)

Directions

Step 1

Preheat your oven to 200°C (400°F) and lightly grease a muffin tin or mince pie tin.

Step 2

In a large mixing bowl, combine the all-purpose flour and a pinch of salt. Add the vegan butter in small chunks.

Step 3

Rub the vegan butter into the flour using your fingertips until the mixture resembles breadcrumbs.

Step 4

Gradually add the cold water, one tablespoon at a time, and mix until a soft dough forms. Avoid overworking the dough. Wrap it in cling film and refrigerate for 20 minutes.

Step 5

Fill each pastry base with a spoonful of the mince filling, being careful not to overfill.

Cut out slightly smaller circles for the tops, or create star or other decorative shapes to cover the pies. Gently press the edges of the tops onto the bases to seal.

Step 10

Bake in the preheated oven for 18-20 minutes, or until the pastry is golden brown.

Step 11

Allow the mince pies to cool slightly before removing them from the tin.

Step 12

Dust with powdered sugar before serving. Enjoy warm or at room temperature!
