  • 1 cup, halved cherry tomatoes
  • 2 tablespoons, chopped fresh cilantro
  • 1 teaspoon (or to taste) salt
  • 0.5 teaspoon (or to taste) black pepper
  • 1 cut into wedges lime

Directions

Step 1

Cut the corn tortillas into 1/2-inch strips, then into small squares or triangles.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the tortilla pieces and sauté for 5-7 minutes, stirring frequently, until they become crispy and golden. Remove the tortilla pieces and set them aside on a plate lined with a paper towel.

Step 3

In a small bowl, crumble the firm tofu with your hands to achieve a texture similar to scrambled eggs.
