Ingredients

  • 4 cups almond milk (unsweetened, plain)
  • 1 cup water
  • 0.33 cup masa harina (corn flour)
  • 0.25 cup coconut sugar (or other vegan sweetener)
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon ground cinnamon
  • 1 pinch pinch of salt

Directions

Step 1

In a medium saucepan, combine the almond milk and water. Place the saucepan over medium heat and bring the mixture to a simmer.

Step 2

While the liquid is heating, whisk the masa harina and 1/2 cup of the warming liquid together in a small bowl to create a smooth slurry. This helps prevent lumps when combining with the rest of the liquid.

Step 3

Slowly pour the masa harina slurry into the saucepan, whisking constantly to incorporate it into the almond milk and water mixture.

Step 4

Add the coconut sugar, vanilla extract, ground cinnamon, and salt to the saucepan. Stir well to combine all the ingredients.

Step 5

Continue heating the atole over medium heat, whisking frequently, until it thickens to a creamy, drinkable consistency. This should take about 10–12 minutes.

Step 6

Once the atole thickens, taste and adjust sweetness or add more cinnamon if desired.

Step 7

Remove the saucepan from heat and allow the atole to cool slightly before serving. Pour into mugs and enjoy warm. Optional: Garnish with a sprinkle of cinnamon on top for presentation.
