Ingredients

  • 3 cups All-purpose flour (or gluten-free flour blend, if needed)
  • 1.25 cups Warm water
  • 2 teaspoons Salt
  • 2 tablespoons Olive oil
  • 2 medium Yellow onion, finely diced
  • 2 medium Carrots, grated
  • 1 large Potato, finely diced
  • 1 cup Pumpkin or butternut squash, finely diced
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 2 tablespoons Fresh dill, chopped (optional, for garnish)
  • 0.5 cup Vegan yogurt or sour cream (optional, for dipping)

Directions

Step 1

In a large mixing bowl, combine the flour and 1/2 teaspoon salt. Gradually add the warm water and 1 tablespoon olive oil, mixing until a dough forms.

Step 2

Knead the dough on a lightly floured surface for 8-10 minutes until smooth and elastic. Cover the dough with a damp towel and let it rest for 30 minutes.

Step 3

Heat 1 tablespoon olive oil in a large sauté pan over medium heat. Add the diced onion and cook for 5-7 minutes until translucent.

Step 4

Add the grated carrots, diced potato, and diced pumpkin (or butternut squash) to the pan. Season with 1 teaspoon salt, ground black pepper, ground cumin, and ground coriander. Stir well and cook for another 8-10 minutes until the vegetables have softened slightly. Remove from heat and allow the filling to cool.

Step 5

Divide the rested dough into 4 equal portions. Roll out each portion into a thin sheet (about 1/8 inch thick) on a floured surface.

Step 6

Cut the dough into 4-5 inch squares. Place about 1-2 tablespoons of the vegetable filling into the center of each square.

Step 7

To shape the manty, bring two opposite corners of the square together over the filling and pinch them. Then, bring the other two corners together, pinching all the edges to seal. Repeat with the remaining dough and filling.

Step 8

Lightly grease the trays of a steamer with oil to prevent sticking. Arrange the manty on the trays, leaving space between them.

Step 9

Steam the manty over boiling water for 35-40 minutes until the dough is tender and fully cooked.

Step 10

Remove the manty from the steamer and let cool slightly before serving. Garnish with chopped fresh dill, if desired, and serve with vegan yogurt or sour cream for dipping.
