Ingredients

  • 240 ml Unsweetened almond milk
  • 7 g Active dry yeast
  • 50 g Cane sugar
  • 60 g Vegan unsalted butter
  • 400 g All-purpose flour
  • 5 g Salt
  • 5 ml Vanilla extract
  • 120 g Fruit jam (e.g., apricot, raspberry, or prune)
  • 30 ml Plant-based milk (for brushing)

Directions

Step 1

Warm the unsweetened almond milk in a small saucepan or microwave until lukewarm (about 40°C). Ensure it's warm but not hot.

Step 2

In a large mixing bowl, dissolve the active dry yeast and 1 tablespoon of cane sugar in the warm almond milk. Let it sit for 5-10 minutes until it becomes foamy.

Step 3

Melt the vegan unsalted butter and allow it to cool slightly. Once the yeast mixture is foamy, stir in the remaining sugar, melted butter, vanilla extract, and salt.

Step 4

Gradually add the all-purpose flour to the mixture, stirring with a wooden spoon or using a stand mixer with a dough hook. Continue until the dough comes together and is slightly sticky.

Step 5

Transfer the dough to a floured surface and knead for 6-8 minutes, or until smooth and elastic. Alternatively, use a stand mixer to knead for about 5 minutes.

Step 6

Place the dough in a lightly oiled bowl, cover it with a clean kitchen towel, and let it rise in a warm place for 1 hour, or until it doubles in size.

Step 7

Once the dough has risen, punch it down to release air. Divide the dough into 12 equal portions and roll each into a smooth ball.

Step 8

Place the dough balls on a baking sheet lined with parchment paper, leaving space between them. Cover with a towel and let them rise for another 30 minutes.

Step 9

Preheat the oven to 180°C (350°F). Using your fingers or the back of a spoon, press a deep indentation in the center of each dough ball to create a well for the filling.

Step 10

Fill each indentation with 1-2 teaspoons of fruit jam or your desired filling.

Step 11

Lightly brush the exposed dough with plant-based milk to promote even browning.

Step 12

Bake in the preheated oven for 18-20 minutes, or until the kolaches are golden brown.

Step 13

Allow the kolaches to cool slightly before serving. Enjoy them warm or at room temperature!
