  • 1 cup Coconut milk
  • 0.5 cup Coconut sugar

  • 1 teaspoon Ground cardamom
  • 0.25 teaspoon Saffron strands
  • 2 tablespoons Pistachios, chopped (optional, for garnish)
  • 2 tablespoons Unsweetened desiccated coconut (optional, for coating)

Directions

Step 1

In a small bowl, soak the saffron strands in 2 tablespoons of warm coconut milk. Set aside to allow the saffron to release its color and aroma.

In a medium-sized non-stick pan, add the coconut milk and coconut sugar. Heat on low-medium, stirring constantly until the sugar dissolves fully. This should take about 3-4 minutes.

Add the almond flour to the pan, stirring continuously to avoid any lumps. Lower the heat to prevent burning.

Add the soaked saffron milk, ground cardamom, and coconut oil to the almond flour mixture. Mix well to combine all ingredients. The mixture should begin to come together into a soft dough-like consistency.
