Ingredients

  • 2 cups All-purpose flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Salt
  • 3 tablespoons Vegetable oil
  • 0.75 cup Water
  • 2 cups Cooked red beans
  • 2 tablespoons Olive oil
  • 2 cloves Garlic cloves
  • 0.5 teaspoon Salt (for beans)
  • 1 whole Avocado
  • 0.5 cup Vegan sour cream
  • 2 teaspoons Hot sauce (optional)

Directions

Step 1

In a mixing bowl, combine the flour, baking powder, and salt for the tortillas.

Step 2

Add vegetable oil and gradually pour in the water while mixing. Knead the dough for about 5 minutes until it is smooth and elastic.

Step 3

Cover the dough with a damp cloth and let it rest for 20 minutes while you prepare the fillings.

Step 4

In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute.

Step 5

Add the cooked red beans to the skillet and mash them with a potato masher or fork until they are creamy. Add salt and stir well. Remove from heat.

Step 6

Divide the tortilla dough into 8 equal portions. Roll each portion into a ball and flatten it using a rolling pin, forming a circle about 6-8 inches wide.

Step 7

Heat a dry skillet or griddle over medium-high heat. Cook each tortilla for about 1-2 minutes on each side, or until lightly golden and puffy spots form. Keep the cooked tortillas warm by covering them with a clean cloth.

Step 8

To assemble the Baleadas, spread a generous layer of refried beans onto each tortilla.

Step 9

Add slices of avocado, a dollop of vegan sour cream, and a drizzle of hot sauce (if desired).

Step 10

Fold the tortillas in half to create a taco-like shape. Serve immediately and enjoy!
