Ingredients

  • 1.5 cups Vital wheat gluten
  • 0.25 cups Chickpea flour
  • 0.25 cups Nutritional yeast
  • 2 teaspoons Smoked paprika
  • 2 teaspoons Garlic powder
  • 2 teaspoons Onion powder
  • 1.5 teaspoons Ground cumin
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried marjoram
  • 3 tablespoons Soy sauce
  • 1 tablespoon Tomato paste
  • 1 cup Vegetable broth
  • 1 tablespoon Olive oil
  • 0.5 cup Coconut milk (full-fat)
  • 1 tablespoon White vinegar
  • 0.25 cup Granulated sugar
  • 1 teaspoon Garlic powder
  • 4 pieces Pita bread (vegan-friendly)
  • 2 cups Lettuce, shredded
  • 1 cup Tomato, diced
  • 0.5 cup Red onion, thinly sliced
  • 0.5 cup Cucumber, diced

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a large bowl, combine the vital wheat gluten, chickpea flour, nutritional yeast, smoked paprika, garlic powder, onion powder, ground cumin, dried oregano, and dried marjoram.

Step 3

In a separate bowl, whisk together the soy sauce, tomato paste, vegetable broth, and olive oil.

Step 4

Pour the wet ingredients into the dry ingredients and mix until a dough forms. Knead the dough for 3-4 minutes until it becomes firm and elastic.

Step 5

Shape the dough into a log about 1.5 inches thick and wrap it tightly in aluminum foil.

Step 6

Place the wrapped dough on the prepared baking sheet and bake for 60 minutes, flipping it halfway through cooking. Once done, leave it to cool slightly before unwrapping and slicing thinly.

Step 7

While the donair 'meat' is baking, make the sweet donair sauce by whisking together the coconut milk, white vinegar, granulated sugar, and garlic powder in a small bowl. Refrigerate until ready to use.

Step 8

Prepare your toppings by shredding the lettuce, dicing the tomato and cucumber, and slicing the red onion thinly.

Step 9

When the donair 'meat' is ready, heat a skillet over medium heat. Lightly pan-sear the sliced 'meat' for a minute on each side for added texture.

Step 10

Warm the pita bread on a skillet or in the oven for a few seconds until soft and pliable.

Step 11

Assemble each donair by laying a piece of warm pita flat, adding a generous portion of donair 'meat,' and topping with lettuce, tomato, red onion, and cucumber. Drizzle with the prepared sweet garlic sauce.

Step 12

Fold the pita in half or wrap it tightly, and serve immediately!
