Ingredients

  • 1 cup Popcorn kernels
  • 2 tablespoons Coconut oil
  • 1 cup Coconut sugar
  • 1 4 cup Maple syrup
  • 2 tablespoons Unsweetened almond milk
  • 1 teaspoon Vanilla extract
  • 1 4 teaspoon Sea salt

Directions

Step 1

Heat a large pot over medium heat. Add 2 tablespoons of coconut oil and the popcorn kernels. Cover the pot with a lid, leaving a small gap to allow steam to escape.

Step 2

Shake the pot occasionally to prevent burning. Once the popping slows down, remove the pot from heat and transfer the popped popcorn to a large mixing bowl. Set aside.

Step 3

In a medium-sized saucepan, combine the coconut sugar, maple syrup, unsweetened almond milk, and sea salt. Heat over medium heat, stirring frequently, until the mixture starts to bubble.

Continue cooking the toffee mixture for 4-5 minutes, stirring constantly, until it thickens slightly and turns glossy.

Remove the saucepan from heat and stir in the vanilla extract.
