Ingredients

  • 1 cup white sesame seeds
  • 3/4 cup jaggery
  • 2 tablespoons water
  • 1/4 teaspoon cardamom powder
  • 1 teaspoon coconut oil (optional, for greasing hands)

Directions

Step 1

Place a heavy-bottomed pan over medium heat and dry roast the white sesame seeds for 3–5 minutes, stirring constantly to ensure even toasting. The seeds should turn golden and release a nutty aroma. Remove from heat and transfer to a plate to cool.

Step 2

In the same pan, add the jaggery and water. Stir the mixture over low to medium heat until the jaggery melts completely and forms a syrup.

Step 3

To check the right consistency of the jaggery syrup, perform the 'soft ball test': Drop a small amount of syrup into a bowl of cold water. If it forms a soft, pliable ball, it's ready. If not, cook the syrup for another minute and test again.

Step 4

Turn off the heat and immediately add the roasted sesame seeds and cardamom powder to the syrup. Mix quickly and thoroughly using a spatula to combine everything evenly.

Allow the mixture to cool slightly (just enough to handle with your hands without burning yourself).

Grease your hands lightly with coconut oil (optional) and take a small portion of the mixture. Roll it between your palms to form a round laddu. Repeat with the remaining mixture.

Let the laddus cool completely at room temperature. They will firm up as they cool.
