Ingredients

  • 1 cup Tapioca pearls
  • 1 cup Taro root (peeled and cubed)
  • 1.5 cups Unsweetened coconut milk
  • 2 cups Water
  • 0.25 cup Coconut cream
  • 3 tablespoons Maple syrup
  • 1 teaspoon Purple sweet potato powder (optional for color)
  • 1 cup Ice cubes
  • 2 tablespoons Brown sugar
  • 0.5 teaspoon Vanilla extract

Directions

Step 1

Bring a medium pot of water to a boil and add the tapioca pearls. Cook the pearls for 20-25 minutes (or according to package instructions) until chewy and translucent. Stir occasionally to prevent sticking.

Step 2

Once cooked, drain the tapioca pearls and transfer them to a bowl of cold water to stop the cooking process. Let them sit for 2-3 minutes, then drain and set aside.

In a separate pot, bring 2 cups of water to a boil. Add the cubed taro root and cook for 10-15 minutes, or until fork-tender.
