Ingredients

  • 1 cup Small pearl tapioca
  • 3 cups Almond milk (unsweetened)
  • 1 cup Coconut milk (full-fat, canned)
  • 0.333333 cup Maple syrup
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Almond extract
  • 0.25 teaspoon Salt
  • 2 tablespoons Chopped toasted almonds (optional, for garnish)
  • 1 cup Fresh fruit or berries (optional, for garnish)

Directions

Step 1

In a medium mixing bowl, combine the tapioca pearls with 1 cup of almond milk. Let the pearls soak for 30 minutes to soften slightly.

Step 2

After soaking, transfer the tapioca mixture to a medium-sized saucepan. Add the remaining almond milk, coconut milk, and salt. Stir well to combine.

Step 3

Place the saucepan over medium heat and bring the mixture to a gentle simmer. Stir frequently to prevent the tapioca pearls from sticking to the bottom of the pan.

Step 4

Cook the mixture for 20-25 minutes, or until the tapioca pearls are translucent and the pudding has thickened. Stir occasionally to ensure even cooking.

Step 5

Once the pudding has thickened, reduce the heat to low. Stir in the maple syrup, vanilla extract, and almond extract. Taste and adjust the sweetness if needed.

Step 6

Remove the saucepan from the heat and let the pudding cool slightly for 5-10 minutes. It will continue to thicken as it cools.

Step 7

Spoon the pudding into individual serving dishes or a large bowl. Allow it to cool to room temperature, then refrigerate for at least 2 hours, or until chilled.

Step 8

Before serving, garnish with chopped toasted almonds and fresh fruit or berries, if desired.

Step 9

Serve the pudding chilled and enjoy!
