  • 12 oz Vegan tagliatelle
  • 2 tbsp Olive oil
  • 1 medium Yellow onion, diced

  • 1 Celery stalk, finely diced
  • 3 Garlic cloves, minced
  • 8 oz Vegan ground meat or crumbled tempeh
  • 28 oz Canned crushed tomatoes
  • 2 tbsp Tomato paste
  • 1 cup Vegetable broth
  • 1 tsp Dried oregano
  • 1 tsp Dried basil
  • 1 Bay leaf
  • 1 tbsp Soy sauce or tamari (for gluten-free)
  • 2 tbsp Nutritional yeast
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp Fresh parsley, chopped (optional for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil for the vegan tagliatelle. Cook according to the package instructions, then drain and set aside.

Step 2

In a large skillet or Dutch oven, heat olive oil over medium heat.

Add the diced onion, carrot, and celery to the skillet. Sauté until softened, about 5-7 minutes, stirring occasionally.

Stir in the minced garlic and cook for an additional 1-2 minutes, until fragrant.
