Ingredients

  • 6 cups Kale, chopped and de-stemmed

  • 1 quarter cup Vegan mayonnaise
  • 2 cloves Garlic, minced
  • 1 tablespoon Capers, finely chopped
  • 0.5 cup Bread crumbs, gluten-free if necessary
  • 1 cup Chickpeas, cooked (or canned, drained and rinsed)
  • 0.5 teaspoon Smoked paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper, freshly ground

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Spread the chickpeas on a baking sheet, pat them dry, and toss with 1 tablespoon of olive oil, smoked paprika, 0.5 teaspoons of salt, and 0.5 teaspoons of black pepper. Roast in the oven for 10 minutes or until crispy, stirring halfway through.
