Ingredients

  • 3 cups Corn kernels (fresh or frozen)
  • 1.5 cups Vegan mayonnaise
  • 2 tablespoons Lime juice (freshly squeezed)
  • 2 tablespoons Nutritional yeast
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 cup Fresh cilantro (chopped)
  • 1 whole Jalapeño (finely diced, optional for heat)
  • 2 stalks Green onion (sliced)
  • 1 tablespoon Olive oil

Directions

Step 1

If using fresh corn, cut the kernels off the cob. You will need about 3-4 ears of corn for 3 cups of kernels. If using frozen corn, thaw it completely and pat it dry with a paper towel.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the corn kernels and cook for 5-7 minutes, stirring occasionally, until the corn is slightly charred. Remove from the heat and let it cool.

Step 3

In a large mixing bowl, combine the vegan mayonnaise, lime juice, nutritional yeast, smoked paprika, chili powder, garlic powder, salt, and black pepper. Mix well until smooth and creamy.
