Ingredients

  • 300 grams Fresh strawberries
  • 400 ml Canned coconut cream (chilled overnight)
  • 3 tablespoons Maple syrup
  • 1 teaspoon Agar-agar powder
  • 2 tablespoons Water
  • 1 teaspoon Vanilla extract

Directions

Step 1

Place the can of coconut cream in the refrigerator overnight to separate the cream from the liquid.

Step 2

Wash and hull the strawberries. Blend them in a blender or food processor until smooth. Strain the puree through a fine-mesh sieve to remove seeds, if desired.

Step 3

In a small saucepan, combine the water and agar-agar powder. Heat over low heat, stirring constantly, until the agar-agar fully dissolves (about 1-2 minutes). Remove from the heat and allow it to cool slightly.

Step 4

In a large mixing bowl, scoop out the thick coconut cream from the refrigerated can, leaving behind the liquid. Whip the coconut cream using an electric mixer or whisk until light and fluffy, about 2-3 minutes.
