Ingredients

  • 1 cup rolled oats
  • 2 cups unsweetened almond milk
  • 1 cup fresh strawberries
  • 1 tablespoon maple syrup
  • 1 teaspoon chia seeds
  • 0.5 teaspoon vanilla extract
  • 0.25 teaspoon ground cinnamon
  • 1 pinch sea salt
  • 2 tablespoons sliced almonds

Directions

Step 1

In a medium saucepan, combine the rolled oats, unsweetened almond milk, chia seeds, vanilla extract, ground cinnamon, and a pinch of sea salt.

Step 2

Place the saucepan over medium heat and bring the mixture to a gentle boil, stirring occasionally to prevent sticking.

Step 3

Once the oatmeal begins to boil, reduce the heat to low and let it simmer for 5-7 minutes, or until the oats are soft and creamy.

Step 4

While the oatmeal is cooking, wash and hull the fresh strawberries. Chop or slice them according to your preference.

Step 5

Set aside half of the strawberries to use as a topping, and mash the other half with a fork to create a chunky strawberry puree.

Step 6

When the oatmeal has reached your desired consistency, stir in the mashed strawberries and maple syrup. Mix well to combine.

Step 7

Divide the oatmeal into two serving bowls. Top each bowl with the reserved sliced strawberries and a sprinkle of sliced almonds for added crunch.

Step 8

Serve warm and enjoy your Vegan Strawberry Delight Oatmeal!
