Ingredients

  • 300 grams Morning glory (water spinach)
  • 4 cloves Garlic
  • 2 medium Red chili
  • 1 tablespoon Fermented soybeans (or miso paste as a substitute)
  • 1.5 tablespoons Soy sauce
  • 1 tablespoon Vegan oyster sauce (or mushroom stir-fry sauce)
  • 1 teaspoon Coconut sugar
  • 2 tablespoons Water
  • 1 tablespoon Neutral vegetable oil

Directions

Step 1

Start by prepping the morning glory: Trim the tough stems and cut the remainder into 3–4 inch pieces. Wash and dry thoroughly.

Peel and roughly chop the garlic. Thinly slice the red chili. Set both aside.

In a small bowl, whisk together the fermented soybeans (or miso paste), soy sauce, vegan oyster sauce, coconut sugar, and water to create the stir-fry sauce.

Heat the vegetable oil in a wok or large skillet over high heat until shimmering.

Add the garlic and chili to the hot oil, and stir-fry for about 20–30 seconds until fragrant, being careful not to burn the garlic.
