Ingredients

  • 300 g Extra-firm tofu
  • 150 g Cremini mushrooms
  • 3 stalks Green onions
  • 2 Garlic cloves
  • 1 tbsp Ginger
  • 2 tbsp Soy sauce (tamari for gluten-free)
  • 1 tbsp Sesame oil
  • 1 tbsp Nutritional yeast
  • 2 tsp Cornstarch
  • 0.5 tsp Salt
  • 0.25 tsp Pepper
  • 30 pieces Vegan dumpling wrappers
  • 4 Cabbage leaves (for steaming base)
  • 0 as needed Water (for sealing wrappers)

Directions

Step 1

Press the extra-firm tofu for 10 minutes to remove excess moisture, then crumble it into small pieces.

Step 2

Finely chop the mushrooms and green onions, mince the garlic, and grate the ginger.

Step 3

Preheat a large skillet over medium heat and add 1/2 tablespoon of sesame oil.

Step 4

Sauté the garlic, ginger, green onions, and mushrooms until the mushrooms release their moisture and shrink, about 5 minutes.

Step 5

Add the crumbled tofu to the skillet, followed by soy sauce, nutritional yeast, cornstarch, salt, and pepper. Stir well and cook for another 2-3 minutes. Remove from heat and let the filling cool to room temperature.

Step 6

Prepare a clean workspace and set out the vegan dumpling wrappers. Place 1 teaspoon of the filling in the center of each wrapper.

Step 7

Dip your finger in water and run it around the edge of the wrapper. Fold the wrapper in half to form a crescent shape and pinch the edges firmly to seal. Optionally, pleat the edges for a traditional look.

Step 8

Line a bamboo or metal steamer with cabbage leaves to prevent sticking. Place the dumplings in the steamer, ensuring they don’t touch each other.

Step 9

Bring a pot of water to a boil and place the steamer on top. Cover and steam the dumplings for 10-12 minutes, or until the wrappers are slightly translucent and cooked through.

Step 10

Carefully remove the dumplings from the steamer and serve warm with your favorite dipping sauce.
