  • 30 milliliters Soy sauce
  • 120 milliliters Water (for seitan)
  • 10 milliliters Sesame oil
  • 5 grams Minced garlic
  • 10 grams Grated ginger
  • 100 grams Shiitake mushrooms, finely chopped
  • 30 grams Scallions, finely chopped
  • 10 grams Cornstarch
  • 15 milliliters Water (for slurry)

Directions

Step 1

In a mixing bowl, combine all-purpose flour, instant yeast, sugar, and warm water. Mix until a dough forms.

Step 2

Knead the dough for 8-10 minutes until it is smooth and elastic. Cover and let it rest in a warm spot for 1 hour, or until doubled in size.

Step 3

While the dough rests, prepare the vegan 'pork' filling. In a separate bowl, mix vital wheat gluten, nutritional yeast, smoked paprika, soy sauce, and 120 ml of water. Knead for 5 minutes to form a seitan dough.
