Ingredients

  • 300 g All-purpose flour
  • 7 g Instant yeast
  • 25 g Sugar
  • 3 g Salt
  • 150 ml Warm water
  • 40 ml Plant-based milk
  • 15 ml Vegetable oil
  • 150 g Firm tofu, crumbled
  • 1 small Carrot, grated
  • 100 g Green cabbage, shredded
  • 2 stalks Green onions, finely chopped
  • 15 ml Soy sauce
  • 5 ml Sesame oil
  • 2 cloves Garlic, minced
  • 1 tsp Ginger, minced
  • 5 g Cornstarch
  • 15 ml Water (for cornstarch slurry)

Directions

Step 1

In a mixing bowl, combine the flour, instant yeast, sugar, and salt.

Step 2

Gradually add warm water, plant-based milk, and vegetable oil while mixing. Knead the dough for about 8-10 minutes until smooth and elastic.

Step 3

Cover the dough with a damp cloth and let it rise in a warm place for 1 hour or until it doubles in size.

Meanwhile, prepare the filling. Heat sesame oil in a pan over medium heat.

Add the minced garlic and ginger and sauté until fragrant.

Add the shredded cabbage, grated carrot, and green onions. Cook for 3-4 minutes until softened.

Stir in the crumbled tofu and soy sauce. Cook for another 2-3 minutes, ensuring everything is well incorporated.

Mix the cornstarch with water to create a slurry. Add it to the filling mixture to thicken it slightly. Remove the pan from the heat and let the filling cool.

Once the dough has risen, punch it down and knead it briefly on a floured surface.

Divide the dough into 8 equal portions. Flatten each portion into a circle about 10 cm in diameter.

Prepare a steamer and bring water to a boil. Place the buns in the steamer basket, ensuring they are not touching each other.

Turn off the heat and let the buns rest in the steamer for 2 minutes before removing them.
