Ingredients

  • 1.5 cups Vital wheat gluten
  • 0.25 cup Chickpea flour
  • 2 tablespoons Nutritional yeast
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Garlic powder
  • 3 tablespoons Soy sauce
  • 1 teaspoon Liquid smoke
  • 0.75 cup Vegetable broth
  • 2 tablespoons Olive oil
  • 1 cup Fresh parsley (for chimichurri sauce)
  • 0.5 cup Fresh cilantro (optional, for chimichurri sauce)
  • 2 Garlic cloves (for chimichurri sauce)
  • 1 teaspoon Red chili flakes (for chimichurri sauce)
  • 3 tablespoons Red wine vinegar (for chimichurri sauce)
  • 0.25 cup Olive oil (for chimichurri sauce)
  • 0.5 teaspoon Salt (for chimichurri sauce)
  • 0.25 teaspoon Black pepper (for chimichurri sauce)

Directions

Step 1

In a large mixing bowl, combine the vital wheat gluten, chickpea flour, nutritional yeast, smoked paprika, and garlic powder.

Step 2

In a separate bowl, whisk together the soy sauce, liquid smoke, vegetable broth, and olive oil.

Step 3

Gradually pour the wet ingredients into the dry ingredients, stirring to combine. Knead the mixture in the bowl or on a clean surface for 2–3 minutes until a firm, stretchy dough forms.

Step 4

Divide the dough into 4 equal portions and shape them into steak-like patties, about 1/2 inch thick.

Step 5

Prepare a steamer and steam the vegan steaks for 25 minutes. Ensure there is enough water in the steamer to last throughout. After steaming, let the steaks cool slightly.

Step 6

While the steaks are cooking, make the chimichurri sauce. In a food processor or blender, combine fresh parsley, cilantro (if using), garlic cloves, red chili flakes, red wine vinegar, olive oil, salt, and black pepper. Pulse until you reach a coarse yet cohesive texture. Set aside.

Step 7

Once the vegan steaks have finished steaming and slightly cooled, preheat a grill pan or skillet over medium-high heat. Brush the steaks lightly with olive oil and sear them on both sides for 2–3 minutes each, or until they develop a golden-brown crust.

Step 8

Serve the vegan steaks hot, topped with generous spoonfuls of chimichurri sauce. Pair with your favorite sides such as roasted vegetables, mashed potatoes, or a green salad.
