Ingredients

  • 10 oz Tortilla chips (preferably thick and sturdy)
  • 8 oz Plant-based steak strips (store-bought or homemade)
  • 1.5 cups Vegan cheddar cheese shreds
  • 1 cup Black beans (cooked or canned, drained and rinsed)
  • 0.5 cup Sweet corn kernels (canned or frozen, thawed)
  • 1 cup Cherry tomatoes, diced
  • 1 large Avocado, diced or smashed
  • 0.25 cup Fresh cilantro, chopped
  • 0.5 cup Vegan sour cream
  • 0.25 cup Pickled jalapeños, sliced (optional)
  • 0.25 cup Red onion, finely diced
  • 1 tbsp Olive oil
  • 2 tsp Taco seasoning
  • 2 tsp Hot sauce (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Heat a skillet over medium heat and add the olive oil. Once warm, add the plant-based steak strips and sprinkle them with taco seasoning. Cook for 4-5 minutes, stirring occasionally, until heated through and slightly crisp on the edges. Remove from heat and set aside.

Step 3

Spread the tortilla chips evenly onto a large, oven-safe baking sheet lined with parchment paper.

Step 4

Sprinkle half of the vegan cheddar cheese shreds over the tortilla chips, followed by the cooked plant-based steak strips, black beans, and corn. Top with the remaining vegan cheddar cheese.

Step 5

Place the nachos in the preheated oven and bake for 8-10 minutes, or until the cheese has melted.
