  • 1 large Yellow bell pepper (sliced into strips)
  • 1 large Red bell pepper (sliced into strips)
  • 1 large Green bell pepper (sliced into strips)
  • 1 large Red onion (sliced into strips)
  • 6 small Flour tortillas (vegan)
  • 1 medium Avocado (optional, for serving)
  • 2 tablespoons Fresh cilantro (optional, for garnish)

Directions

Step 1

In a medium mixing bowl, whisk together the soy sauce, olive oil, lime juice, smoked paprika, garlic powder, ground cumin, chili powder, and maple syrup to create the marinade.

Place the sliced seitan into the bowl with the marinade and toss to coat evenly. Set aside for at least 10 minutes to allow the flavors to absorb.
