Ingredients

  • 200 grams Extra-firm tofu
  • 2 tablespoons Lemon juice
  • 2 tablespoons Nutritional yeast
  • 1 tablespoon Olive oil
  • 1 teaspoon Apple cider vinegar
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Garlic powder
  • 2 cups Spinach
  • 4 pieces Sun-dried tomatoes (packed in oil, drained)
  • 2 cloves Garlic
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 pieces Whole-grain tortillas (vegan and large)

Directions

Step 1

Press the tofu for 10 minutes to remove excess water. Use a clean kitchen towel or paper towel and place something heavy on top.

Step 2

Crumble the pressed tofu into a medium bowl and add lemon juice, nutritional yeast, olive oil, apple cider vinegar, oregano, garlic powder, and a pinch of salt and pepper. Mix well to create a 'feta-like' texture. Set aside.

Step 3

In a skillet over medium heat, sauté minced garlic in a small drizzle of olive oil for 1-2 minutes until fragrant.

Add the spinach to the skillet and cook until wilted, about 3 minutes. Add a pinch of salt and pepper to taste.
