  • 1 cup Canned chickpeas (drained and rinsed)

  • 2 tablespoons Ground flaxseed
  • 5 tablespoons Water
  • 2 Garlic cloves (minced)
  • 0.5 cup Onion (finely diced)
  • 1 teaspoon Ground cumin
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Olive oil (for cooking, optional)

Directions

Step 1

Combine the ground flaxseed and water in a small bowl, stir, and let sit for 5 minutes to create a flax 'egg'.

Step 2

Meanwhile, lightly blanch the spinach by placing it in a pot of boiling water for 30 seconds, then quickly transfer it to a bowl of ice water to stop the cooking process. Drain thoroughly and squeeze out excess water. Chop finely.

In a food processor, add the chickpeas, rolled oats, nutritional yeast, minced garlic, diced onion, cumin, smoked paprika, salt, and black pepper. Pulse until the mixture is well combined but still slightly textured.
