  • 1 tablespoon Olive oil
  • 4 cups Fresh spinach
  • 8 ounces Cremini or button mushrooms, sliced
  • 1 teaspoon Dijon mustard
  • 2 tablespoons Fresh parsley or chives, chopped (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Place the vegan pie crust into a 9-inch pie dish if not already prepared. Set aside.

Drain the tofu and press it between paper towels or a clean kitchen towel to remove excess moisture.
