Ingredients

  • 2 cups soy curls
  • 2 cups hot water
  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon maple syrup
  • 1 tablespoon sriracha
  • 1 tablespoon rice vinegar
  • 1 teaspoon cornstarch
  • 2 tablespoons water
  • 3 cloves minced garlic
  • 1 teaspoon grated ginger
  • 1 red bell pepper, sliced
  • 1 medium onion, sliced
  • 1 cup green beans, trimmed
  • 2 stalks green onions, sliced
  • 1 tablespoon toasted sesame seeds
  • 2 cups cooked rice

Directions

Step 1

Place the soy curls in a large bowl. Add the hot water and let them soak for 10 minutes until rehydrated. Then, drain and squeeze out excess water. Set aside.

Step 2

In a small bowl, whisk together soy sauce, sesame oil, maple syrup, sriracha, rice vinegar, cornstarch, and 2 tablespoons of water. This will be your stir-fry sauce. Set aside.

Step 3

Heat a large skillet or wok over medium-high heat. Add 1 tablespoon of sesame oil.

Step 4

Add the minced garlic and grated ginger to the skillet and sauté for 30 seconds until fragrant.

Add the sliced onion, red bell pepper, and green beans to the skillet. Stir-fry for 4-5 minutes or until the vegetables are tender-crisp.

Step 8

Remove from the heat and garnish with sliced green onions and toasted sesame seeds.
