  • 1 cup Cooked rice (white or brown)
  • 4 Large flour tortillas (vegan)
  • 1 Ripe avocado
  • 1 tbsp Fresh lime juice
  • 2 tbsp Cilantro (chopped)
  • 1 Tomato (diced)
  • 1 cup Lettuce (shredded)
  • 2 tsp Hot sauce (optional)

Directions

Step 1

In a small bowl, mix smoked paprika, chili powder, ground cumin, garlic powder, cayenne pepper, and salt to create the spice blend.

Heat olive oil in a skillet over medium heat. Add the vegan shrimp and sprinkle the spice blend over them. Cook for 5-7 minutes, stirring occasionally, until the shrimp are golden and well coated in spices. Remove from heat and set aside.
