Directions

Step 1

Peel and boil the potatoes in salted water until tender. Drain and mash them until smooth. Set aside to cool.

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute.
