Preheat the oven to 180°C (350°F). Lightly grease a 9x13-inch baking dish or a similarly sized pan with a bit of olive oil.
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened.
Add the minced garlic and cook for another minute until fragrant.
Gradually add the fresh spinach to the skillet, stirring continuously. Cook until wilted and any excess liquid has evaporated, about 5 minutes. Remove from heat and set aside to cool slightly.
In a medium-sized mixing bowl, crumble the vegan feta cheese and tofu together until they resemble a crumbly texture. Add the dill, parsley, nutritional yeast, lemon juice, salt, and black pepper. Mix well to combine.
Once the spinach mixture has cooled, combine it with the cheez mixture. Mix thoroughly until the filling is evenly distributed.

Place one sheet of filo pastry into the baking dish, allowing the edges to hang over the sides. Brush it lightly with melted vegan butter. Repeat this step with 5 more sheets, layering them and brushing each with butter.
Spread the spinach and cheez mixture evenly over the layered filo sheets in the dish.
Place the remaining 4 filo sheets on top of the filling, layering and brushing each sheet with melted butter as before. Tuck any overhanging edges neatly into the pan.
Using a sharp knife, score the top layer of filo into squares or diamond shapes to make slicing easier after baking.
Bake the pie in the preheated oven for 35-40 minutes, or until the filo pastry is golden brown and crispy.
