Ingredients

  • 400 grams Vegan spaghetti
  • 2 tablespoons Olive oil
  • 4 links Vegan sausage
  • 1 large Yellow onion, finely chopped
  • 3 large Garlic cloves, minced
  • 800 grams Crushed tomatoes
  • 2 tablespoons Tomato paste
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 0.5 teaspoons Crushed red chili flakes
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 1 teaspoon Granulated sugar
  • 5 leaves Fresh basil leaves, chopped
  • 50 grams Vegan Parmesan cheese (optional)
  • 1 cup Water

Directions

Step 1

Fill a large pot with water, add a generous pinch of salt, and bring it to a boil.

Step 2

Cook the vegan spaghetti according to the package instructions until al dente. Drain and set aside.

Step 3

Heat olive oil in a large skillet over medium heat.

Step 4

Slice the vegan sausage links into 1/2-inch rounds. Add them to the skillet and cook for 5–7 minutes, turning occasionally, until browned. Remove from the skillet and set aside.

In the same skillet, add the chopped onion. Sauté for 3–4 minutes until softened.

Add the minced garlic and sauté for another minute until fragrant.

Pour in the crushed tomatoes and mix in the tomato paste, dried oregano, dried basil, and crushed red chili flakes. Stir to combine.
